A Winter Made for the West Coast

In winter, Risby Cove takes on a different rhythm.

Set directly on Macquarie Harbour, the hotel turns inward; fires lit, suites warmed and the pace deliberately slowed. With fewer visitors on the West Coast, winter brings a rare sense of privacy, stillness and connection that summer cannot offer.

This is a season for lingering meals, quiet mornings on the water and experiences shaped by place rather than schedule.

A Ritual Shaped by Place

Within the original grounds of the Risby Brothers sawmill stands the Piner’s Hut; once shelter for the piners who worked the forests and harbour through bitter winters.

This winter, it becomes the setting for a private, intimate lantern-lit feast, drawing directly from the West Coast’s working past and winter conditions.

Dine by Lantern Light

Wrapped in blankets, step inside the historic hut to dine by lantern and candlelight.

A bespoke winter tasting menu is served, inspired by the piners’ rugged lives and the surrounding landscape. Each course is matched with wines and winter liqueurs, while stories of craft, hardship and resilience unfold by the fire. Outside, the harbour settles into silence. Inside, the evening lingers.

Suites Designed for Winter

Winter at Risby Cove is experienced as much in the suite as beyond it.

Private hot tubs and infrared saunas are positioned for cold-season living — stepping from night air into warmth as rain moves across the harbour. Sparkling wine and chocolate truffles complete the nightly Romance Ritual.
